<\/a><\/p>\nEl edificio adopta una forma de U, mediante la cual se permite el transito por la ladera, adem\u00e1s de configurarse un espacio interior a trav\u00e9s del cual se desarrollan todas las circulaciones, configur\u00e1ndose de este modo un espacio lleno de actividad, en el que se ponen de manifiesto las relaciones y el intercambio como dos elementos determinantes bajo la \u00f3ptica de la innovaci\u00f3n.<\/p>\n
Desde un punto de vista funcional solo cabe destacar, que este esquema ha permitido organizar el programa de forma sintetizada, en dos grupos, uno dedicado a la parte acad\u00e9mica y otro a la pr\u00e1ctica. La agrupaci\u00f3n en vertical de todos los espacios del programa dedicados a la aplicaci\u00f3n pr\u00e1ctica de la gastronom\u00eda, como son los vestuarios, talleres, cocinas de preelaboraci\u00f3n, acceso de materias primas y las cocinas de los espacios de restauraci\u00f3n, de tal modo que la interconexi\u00f3n entre todos ellos, tanto para las personas como para las mercanc\u00edas sea directa.<\/p>\n
En la distancia el edificio muestra las diferentes bandejas que lo configuran, equiparando su escala a la de los edificios del parque tecnol\u00f3gico de Miram\u00f3n, mientras en la aproximaci\u00f3n cercana las cubiertas se convierten en huertos de cultivo de plantas comestibles y arom\u00e1ticas, neutralizando casi por completo la presencia del edificio en su relaci\u00f3n con las viviendas del entorno.<\/p>\n El edificio expresa su condici\u00f3n de topograf\u00eda extra\u00edda del lugar remarcando el car\u00e1cter de soporte de los forjados que se amontonan como platos desordenados siguiendo las curvas de nivel. Es la condici\u00f3n estructurante en cuanto soportes de la actividad del edificio la que los forjados atesoran, al igual que el plato mantiene el valor iconogr\u00e1fico de soporte del trabajo desarrollado en la cocina.<\/p>\n Generaci\u00f3n de la volumetr\u00eda:<\/strong> El artista Robert Therrien (Chicago 1947) manipula objetos de uso cotidiano en la cocina como elementos de vajilla, cacerolas o menaje para elevarlos a la categor\u00eda de objetos de arte. Mediante amontonamientos, acumulaciones o multiplicaciones de escala, traslada esos mismos objetos presentes en la cotidianeidad a un registro art\u00edstico. La normalidad de los objetos contrasta con la presencia iconogr\u00e1fica que adquieren en su nueva dimensi\u00f3n.<\/em><\/p>\n Esta misma operativa ha sido llevada a la definici\u00f3n volum\u00e9trica exterior del edificio, en la que esos mismos platos de Therrien, servir\u00e1n como soporte cotidiano a unos espacios dedicados al desarrollo tecnol\u00f3gico y a la innovaci\u00f3n en la gastronom\u00eda. Se cierra as\u00ed un camino de ida y vuelta, mediante el planteamiento de una met\u00e1fora en la que el \u201cplato vuelve a ser el soporte de la gastronom\u00eda<\/em>\u201d.<\/p>\n Esta condici\u00f3n redunda en el paralelismo entre gastronom\u00eda y arquitectura, en el sentido de que tanto el cocinero como el arquitecto desarrollan su trabajo para los dem\u00e1s, dando soporte al disfrute ajeno, en una clara vocaci\u00f3n de servir al comensal o al usuario del edificio.<\/p>\n La utilizaci\u00f3n de geometr\u00edas que recuerdan tanto el apilamiento de platos como la suavidad de las ondas que representan la topograf\u00eda de la ladera original consigue dar un efecto unitario al conjunto que sirve de estrategia de fusi\u00f3n entre arquitectura y paisaje.<\/p>\n Obra: Facultad de ciencias gastron\u00f3micas y centro de investigaci\u00f3n e innovaci\u00f3n en ciencias gastron\u00f3micas de Mondragon Unibertsitatea + premios + publicaciones \n <\/p>\n The new building that will shelter the headquarters of the Basque Culinary Center, places in a tangential plot to Miram\u00f3n’s technological park. This condition of proximity together with the marked earring of the lot they contribute the necessary point of item of this architectural offer.<\/p>\n On the one hand the building must serve as icon of the faculty which serves, projecting on the outside an image based on the technological leadership and on the innovation; and for another debit to respect and to interact with the scale of low residential density of the neighborhood to which it joins. It is for this dual condition, for which the building takes advantage of the difference of the hillside to organize his functional program of it arrives down, placing the public parts of the program in the plant of access, and favoring the specialization of the program as we are going down, that is to say entering the building.<\/p>\n The building adopts a form of Or, by means of which the traffic is allowed by the hillside, beside there be forming an interior space across which all the traffics develop, there being formed thus a space full of activity, in which the relations and the exchange are revealed as two determinant elements under the optics of the innovation.<\/p>\n From a functional alone point of view it is necessary to emphasize, that this scheme has allowed to organize the program of synthesized form, in two groups, one dedicated to the academic part and other one to the practice. The group in vertical of all the spaces of the program dedicated to the practical application of the gastronomy, since they are the wardrobes, workshops, kitchens of preelaboraci\u00f3n, I access of raw materials and the kitchens of the spaces of restoration, in such a way that the interconnection between all of them, both for the persons and for the goods it is direct.<\/p>\n In the distance the building shows the different trays that form it, comparing his scale to that of the buildings of Miram\u00f3n’s technological park, while in the nearby approximation the covers turn into gardens of culture of eatable and aromatic plants, neutralizing almost completely the presence of the building in his relation with the housings of the environment.<\/p>\n The building expresses his condition of extracted local topography noticing the character of support of the wrought ones that are accumulated as untid plates following the level curves. It is the structuring condition in all that supports of the activity of the building the one that the wrought ones hoard, as the plate supports the iconographic value of support of the work developed in the kitchen.<\/p>\n Generation of the volumetry:<\/strong><\/p>\n From a conceptual optics, the volumetry has been generated on the basis of the game on a large scale between a reference ic\u00f3nica (accumulated plates) and the own building.<\/p>\n The artist Robert Therrien (Chicago 1947) manipulates objects of daily use in the kitchen as elements of china, pans or furniture to raise them to the category of objects of art. Esta condici\u00f3n de proximidade xunto coa acusada pendente do solar aportan o necesario punto de partida desta proposta arquitect\u00f3nica.<\/p>\n Por unha banda o edificio debe servir como icono da facultade \u00e1 que serve, proxectando ao exterior unha imaxe fundamentada no liderado tecnol\u00f3xico e na innovaci\u00f3n; e por outro debe respectar e interactuar coa escala de baixa densidad residencial do barrio ao que se incorpora. \u00c9 por esta condici\u00f3n dual, pola que o edificio aprov\u00e9itase do desnivel da ladera para organizar o seu programa funcional de arriba cara abaixo, colocando as partes p\u00fablicas do programa na planta de acceso, e favorecendo a especializaci\u00f3n do programa segundo imos baixando, \u00e9 dicir penetr\u00e1ndonos no edificio.<\/p>\n O edificio adopta unha forma de Ou, mediante a cal perm\u00edtese o transito pola ladera, ademais de configurarse un espazo interior a trav\u00e9s do cal desenv\u00f3lvense todas as circulaci\u00f3ns, configur\u00e1ndose deste xeito un espazo cheo de actividade, no que se po\u00f1en de manifesto as relaci\u00f3ns e o intercambio como dous elementos determinantes baixo a \u00f3ptica da innovaci\u00f3n.<\/p>\n Desde un punto de vista funcional s\u00f3 cabo destacar, que este esquema permitiu organizar o programa de forma sintetizada, en dous grupos, un dedicado \u00e1 parte acad\u00e9mica e outro \u00e1 pr\u00e1ctica. Mediante amontoamentos, acumulaci\u00f3ns ou multiplicaciones de escala, traslada eses mesmos obxectos presentes na cotidianeidad a un rexistro art\u00edstico. A normalidad dos obxectos contrasta coa presenza iconogr\u00e1fica que adquiren na s\u00faa nova dimensi\u00f3n.<\/em><\/p>\n <\/em><\/p>\n Esta mesma operativa foi levada \u00e1 definici\u00f3n volum\u00e9trica exterior do edificio, na que eses mesmos pratos de Therrien, servir\u00e1n como soporte coti\u00e1n a uns espazos dedicados ao desenvolvemento tecnol\u00f3xico e \u00e1 innovaci\u00f3n na gastronom\u00eda.
