Arquitectura para degustar | Javier Garuz<\/span><\/figcaption><\/figure>\n<p style=\"text-align: justify;\">Desde la lucha por la vida hasta las \u00faltimas modas gastron\u00f3micas, la alimentaci\u00f3n no ha dejado nunca de ser un asunto, si bien corp\u00f3reo y\/o espiritual, fundamental. Desde los noventa, Espa\u00f1a es considerado a nivel internacional como uno de los pa\u00edses con mayor variedad y riqueza en el \u00e1mbito gastron\u00f3mico. Sin embargo, la interdisciplinariedad y cooperaci\u00f3n entre este \u00e1mbito y la arquitectura parece ser una tendencia con origen relativamente reciente. La gastronom\u00eda se ha convertido en un sector puntero en el que ya no s\u00f3lo importa el qu\u00e9 comemos sino tambi\u00e9n el\u00a0<em>c\u00f3mo\u00a0<\/em>y el\u00a0<em>d\u00f3nde\u00a0<\/em>lo hacemos \u2013su atm\u00f3sfera, el espacio anfitri\u00f3n\u2013, mostr\u00e1ndose como elementos decisivos para lograr una experiencia estimulante en el comensal.<\/p>\n<p style=\"text-align: justify;\">Este escrito aborda principalmente dicha experiencia del comensal a trav\u00e9s de los cinco sentidos en dos atm\u00f3sferas gastron\u00f3micas \u2013seleccionadas por el autor seg\u00fan el alto reconocimiento tanto de los chefs como de los arquitectos involucrados\u2013, como son Atrio y El Prat de Les Cols. La cr\u00edtica arquitect\u00f3nica, apoy\u00e1ndose en fotograf\u00edas, pinturas, entrevistas y visitas al lugar, se interesa aqu\u00ed por saber c\u00f3mo dichas atm\u00f3sferas han sido\u00a0<em>elaboradas<\/em>, \u201ctal como un cocinero observa los movimientos de un colega preparando una de sus recetas\u201d \u2013en palabras del arquitecto Carlos Mart\u00ed.<\/p>\n<p style=\"text-align: justify;\">Se expondr\u00e1n los valores aprendidos en pos de corroborar y hacer ver al lector \u2013desde la reflexi\u00f3n\u2013 la existencia de v\u00ednculos entre los \u00e1mbitos arquitect\u00f3nico y culinario. Se valorar\u00e1 el don del arquitecto para materializar la filosof\u00eda y las inquietudes del chef; y para empatizar con la correspondiente experiencia del comensal a la hora de\u00a0<em>degustar<\/em>, tanto el ingrediente de su plato como la materia de su entorno.<\/p>\n<h5><strong>Javier Garuz (Zaragoza, 1999) <\/strong><\/h5>\n<p style=\"text-align: justify;\">Arquitecto por la Universidad de Zaragoza (2023) con segundo mejor Expediente Acad\u00e9mico Fin de Carrera, habiendo complementado sus estudios en el Politecnico di Milano con mejor Expediente Acad\u00e9mico E+ y con la ETH Z\u00fcrich. En su infancia fue reconocido con diversos premios de dibujo y, durante su etapa universitaria, colabor\u00f3 en el desarrollo de propuestas sostenibles para la gesti\u00f3n de energ\u00edas renovables en el Instituto Tecnol\u00f3gico de Arag\u00f3n.<\/p>\n<p style=\"text-align: justify;\">En 2021, su trabajo fue finalista del Premio Nacional Foro Cer\u00e1mico HISPALYT, el cual distingue a j\u00f3venes arquitectos en Espa\u00f1a. Su emergente trayectoria se ha visto reflejada en varias distinciones en concursos nacionales, incluyendo los recientes premios del Colegio Oficial de Arquitectos de Arag\u00f3n y la Fundaci\u00f3n Alejandro de la Sota por su \u201cminimalismo denso\u201d en fotograf\u00eda.
